A Game-Day Must!

After this weekend full of football, I am left today thinking the only good thing about tailgating is the food (especially since yesterday was spent walking all over the place in the heat only to be followed by a near silent car ride home with my ever so lovely husband who as you can imagine was in a FANTASTIC mood). After my friend Holly M. posted some of her favorite fall recipes, I was inspired to post this one. This is a recipe that I pull out every fall and everyone who has it LOVES it, especially boys!! It is a great "football season" food.
Buffalo Chicken Dip
Ingredients:
1 1/2 pounds cooked chicken breast (I actually just buy a rotisserie chicken and have John pull the meat off because it ends up being easier and gives it a bit more flavor)
2 (8oz) packages of cream cheese
1 cup of ranch or blue cheese dressing (I use ranch)
1 cup of shredded cheddar cheese
8 oz. of buffalo wing hot sauce (I use the Hooters brand that can be found at Wal-Mart and some grocery stores-it is a thicker wing sauce than most. It is pricier than the others, but worth it because it isn't as runny)

-If you choose to buy chicken breasts, poach the chicken in boiling water until it is cooked. Shred the cooked chicken by pulsing it in a food processor until finely chopped (this was the recipe recommendations, however we found that we like the dip better if you just pull the chicken so that it is a little chunkier).
-Mix the cream cheese, ranch dressing, cheddar cheese, and hot sauce in a bowl with a hand mixer until well combined. Stir in the chicken.
-Bake at 350 degrees for 30 minutes. Sitr and bake an additional 10-15 minutes. Serve with tortilla scoops or Fritos. Yummy!

oooh - thanks for reminding me of this recipe! everyone totally loves it, and people love you for bringing it (which is always so good for the ego!). i'll be making this on thursday for book club, since i was such a hit last time i did it. :) we need to post recipes more often - i used one of holly's for tailgating this week.
i'm so sorry about your long drive home - that must have been painful. it was hard enough being in the same house with that. i tried to make it better by stopping the tivo recording, then deleting it as if it never happened, but it didn't seem to help much.
